Pompano civeche

1 pompano or fish of your choice.
1 red onion
1 orange bell pepper
1 tsp minced garlic
1/2 cup lime juice
some fresh cilantro
salt and pepper

Cut fish into small cubes. Dice onion and bell pepper then combine fish, onion, bell pepper ,garlic, and lime juice. Mix well and place in fridge for 2hrs. Season with salt, pepper, and chopped cilantro. Enjoy with chips, tortillas, or just a spoon.
